A Hudson Valley bakery, best known as one of Oprah Winfrey's favorites, is set for an expansion. Carousel Cakes is a Rockland County based business with roots in the Catskills. According to LoHud, Oprah put them on the map in 2009 when she discovered their Red Velvet cake. The cake made Oprah's Favorite Things list that year and the rest is history.

The family run business will be making their first expansion in over 30 years by adding a new lobby and case to display desserts. The 1,800 square foot addition will bring the total square footage of the bakery to around 8,000. The store offers some 90 different kinds of cakes and cupcakes.

The bakery itself employs 30 people, but you can find Carousel Cakes all over the tri-state area. As fare as their best sellers go, the Oprah cake is in a league of it's own. But their Chocolate Mousse Supreme and New York Cheesecake are worth checking out too.
