More proof that every day of the year is a “Day” that no one has heard of.Today, April 21, is “National Chocolate Covered Cashew Day”

So here are a few facts about Cashews, including the fact that they are “seed” and not a nut.

From foodimentary.com.  Pistachio, mango, cashew and poison ivy are in the same family. Cashews are native to Costa Rica and Central America. Cashews in Costa Rica are harvested during March and April.

Cashews, as with other tree nuts, are a good source of antioxidants. Alkyl phenols, in particular, are abundant in cashews. They are also a source of dietary trace minerals copper, manganese, magnesium and phosphorus. (From wholefoods.com)
