This week has been jam packed with all sorts of 'national holidays' - sadly none of them gave us a day off from work, but they've been pretty fun to celebrate (in my opinion).  On Wednesday we took a break from torturing our siblings to play nice on National Siblings Day and then yesterday showed our pets some love for National Pet Day.

Well, today brings a new reason to celebrate, and a tasty reason at that.

It's been referenced as one of the most popular comfort foods on the planet, and there's so many different ways to enjoy a grilled cheese - standard just cheese, adding tomatoes, bacon, ham, and so on...

I once had a grilled cheese with spinach artichoke dip inside and it was outstanding.

Apparently, back in the day the popular sandwich was not so much of a sandwich at all, it was called "Cheese Dream" and served open face, then, according to Holidays Calendar, "During World War II, the top piece of bread was added and the sandwich was simply called “cheese filled sandwiches.” It wouldn’t be until the 1960s that someone would dub this sandwich the grilled cheese sandwich."

We've been officially celebrating the holiday since the late 1990s, so it's a pretty big deal.  In my house, it's pretty much a grilled cheese celebration every other day, again, because toddlers.

How will you celebrate today, and where in the Hudson Valley can you find the best grilled cheese?
