There has been many articles written here about the great things and dining opportunities that take place at The Culinary Institute of America in Hyde Park, NY. Yet, many people have still not ventured on to the campus to check them out. Here is another one of their special dinners that you can experience for yourself.

This particular night will focus on cheese in Italian cooking. Each one of the courses will highlight a particular cheese from a different region of Italy. The meal will also be accompanied by four glasses of wine, each to pair with specific dishes.

The meal includes:

  • Buffalo mozzarella with fava bean purée
  • Quail salad with Imbriago cheese, raisins, pine nuts and wine vinaigrette
  • Savory cookie with Fiore Sardo cheese, eggs, and asparagus
  • Risotto with Gorgonzola piccante cheese
  • Pork medallion with Pecorino cheese and saffron sauce
  • Crème caramel with pear and Parmesan cheese

The event will take place in the Caterina de Medici Restaurant May 25, 2016 at 6PM. The cost of the dinner is $85, pre-paid, all inclusive.
