The COVID-19 pandemic hasn't been too kind to small, local businesses. So when new businesses plan to open their doors in the Hudson Valley we get pretty excited.

Back in early February of 2021, VegAdvice.com shared that 2 new vegan businesses were coming to our neck of the woods.

Vegan Junk Food Café is definitely one of the more unique businesses to plant their roots in the Hudson Valley. According to their website, Vegan Junk Food is all about the mushrooms.

Owners Kim and Jeff write:

Our cafe is dedicated to the mushroom. Delicious plant based  items will be available on our menu. More to share soon.

As of right now, the only item they have on their menu is an order of 30 Mushroom nuggets. The 100% vegan Vegan Junk Food Cafe in Kingston will open this April. Follow along with them on social media or on their website. 

If you're on a health food kick or looking to stick to a strict vegan diet and still want a treat, Peaceful Provisions is your new spot. 

Peaceful Provisions is a 100% vegan donut shop and they are scheduled to open up early this spring in Beacon. Think Glazed Over Donuts, just the vegan version.

Currently they are fundraising to help open up their business and they are offering pre-orders and pick-up only in the Croton area. Until the store front opens in Beacon, pre-orders can be made every Wednesday starting at 3 pm.

Peaceful Provisions will be calling 383 Main Street, in Beacon, home this upcoming spring.
