There are a lot of unfair stereotypes and jokes about Chinese food. I'm certainly no proponent of them, and I happen to love Chinese food. No, I've never had any chicken with the same texture, color, flavor, shape, or any other traits even remotely resembling those you'd find in Chinese food chicken, but that doesn't mean that I would assume it's not chicken, like the old urban legend says. Snopes here has the article about it and some of the history, but c'mon, there's no way that Chinese restaurants are serving animals and then labeling it as something else.
