Charcuterie boards have been all the rage lately - meats and fancy cheeses, crackers and breads, and if you want to take it up a level, maybe some jelly, jam or nuts.  While that's great and all, and would typically make my little Italian heart skip a beat, let's be serious for a second - who wouldn't be down for a pancake board?

While scrolling on Instagram the other morning and delaying getting my day started, I scrolled by a giant platter of pancakes and toppings, and had to go back for a second look - what was this carb lovers dream all about?

Well, imagine the pancake as the serving vessel, and all of the different options and variations of what you might top it with for the perfect brunch bite.  Savory, salty, sweet, a combo of all 3, the options really are endless!

Upon further research, an article from earlier this year on newshub sparked my interest even more, and has me looking for an opportunity to get the gang over for brunch at my place to put my pancake board making skills to the test.

A pro tip from the article tells us how to arrange this breakfasty treat:

You can make your own by filling a breadboard or large serving dish with pancakes, spreads, fruit and sprinkles. Use glass jars and ramekins to help separate the ingredients, as well as looking fab.

What am I planning to put on my pancake board?  I'm so glad you asked!  Initial ideas include:  breakfast meats, nutella (obviously), jelly, fruit, scrambled eggs, syrup, maybe even some fancy cheeses.  If you're feeling especially adventurous, you may even think about throwing some crepes in the mix.
